Cooked Kale Salad with Roasted Yam, Carrots and Cranberries
Ingredients serves 2
3 small yams - cut up into small squares and roasted. Season with pepper & garlic seasoning
1 head of kale - chopped up and added into pan with sautéed onions, garlic, pine nuts and sunflower seeds until cooked
1 onion - sautéed
4 garlic cloves - sautéed
2 carrots - shredded, added to salad raw
3 tbsp sunflower seeds
3 tbsp pine nuts
1/4 cup of dried cranberries
dressing
4 tbsp balsamic vinaigrette
3 tbsp olive oil
2 tbsp mustard
1 tbsp maple syrup
1/2 tsp chilli powder
